I highly recommend Toppolinos (uncertain spelling) in Fitzroy Street St Kilda ..... try to the extent of the seafood that is romantic and a shared meal.
Followed by a few drinks at the Espy, while watching a live band, falaffals falaffal midnight in the kitchen, Acland Street, and then maybe a nice walk along the pier at St. Kilda.
Hotel wise ... Recently I was at the Langham Hotel on the edge .... Yarra expensive, but certainly a little Nice deal.
Whatever your decision, make sure that your monitor to allow him to love what all people! * Wink wink *! It's the least that we set for him in touch with you to do! (You know, I'm kidding!)
Docklands is an option, there are many new clubs and restaurants, as development is important. (Well its a lot of time people have almost forgotten the habit) from operations.
If you are willing to travel out of town, the Chapel of the street is the club.
